15 minutes to Make Dinner - Sardines With Rice and Fried Eggs

I did not know what to cook and my nine year old suggested a meal of sardines, rice and eggs. Its easy and quick and very tasty. He cooked the sardines and fried the eggs. We took a litttle less than 15 minutes to get out of the kitchen and onto the table.

We used sardines that come in a can. The sardine cans are with tomato paste. Alternatively, is to use fresh sardines and buy the tomato paste separately or make it yourself. But this was meant to be a quick meal and I wanted my boy to prepare it.

1. Start with the basics - chopped onions, garlic and ginger
You can use as much or as little as you want or prefere. I find that a bit of garlic and ginger gives a simple dish the flavour and tantalising the taste bunds.


2. Place a little oil into a pan

3.  Let the onions, garlic and ginger fry for a few minutes (no hard and fast rules - it depends on you like them e.g. really brown or a little bit raw)

4.    Add in the paste from the sardines first and a little bit of water

5.    For a little bit more of contrasting taste - slice some chilli and add a pinch of curry powder or chilli powder

6.    Add in the Sardines

7.    Let it cook for a minute or two. Add a little water for some gravy if you like.

8.    Done. Serve with Rice and Fried Eggs.

This is an excellant meal for children above 9 to prepare.
